Ingredients

  • 4 large eggs beaten
  • 1 cup spinach fresh, roughly chopped
  • 4 slices bacon cooked and crumbled
  • 1/2 cup mushrooms sliced
  • 1/4 cup feta cheese crumbled
  • 1/4 cup cottage cheese optional for creaminess
  • to taste salt and pepper
  • 2 tbsp butter for cooking

Instructions

  • Prepare Ingredients: Wash and chop the spinach, slice the mushrooms, crumble the feta, and cook and crumble the bacon.
  • Beat Eggs: In a mixing bowl, beat the eggs and optionally mix in cottage cheese for extra creaminess.
  • Cook Bacon: In a non-stick skillet over medium heat, cook the bacon until crisp, then remove and crumble.
  • Saute Vegetables: In the same skillet, add butter and saute the mushrooms and spinach until the spinach is wilted.
  • Pour Eggs: Pour the beaten eggs over the sauteed vegetables in the skillet, distributing evenly.
  • Add Fillings: Sprinkle the crumbled bacon, feta cheese, and additional salt and pepper over the eggs.
  • Cook Omelette: Cook over low heat until the eggs are set and the bottom is golden, about 3-4 minutes. Fold the omelette in half with a spatula and serve hot.
