- 500 g Chicken breasts boneless
- 2 tbsp Chipotle powder
- 1 cup Rice
- 2 cups Water
- 1 tbsp Olive oil
- To taste Salt and pepper
Preparation: Preheat the oven to 200C/400F. Rub the chicken with olive oil, chipotle powder, salt, and pepper. Set aside to marinate.
Cook Rice: In a saucepan, bring water to boil. Add rice, reduce heat, cover, and simmer for 20 minutes or until water is absorbed.
Bake Chicken: Place marinated chicken on a baking tray. Bake in the preheated oven for 25-30 minutes, until cooked through.
Assemble: Divide the cooked rice among four bowls. Top with sliced baked chicken. Drizzle the homemade sauce. Serve hot.
