- 4 slices whole grain bread toasted
- 4 large eggs fresh
- 1 cup vinegar for poaching eggs
- 1 tsp salt
- 2 tbsp butter softened
- 1 handful arugula optional, for garnish
Prepare water: Fill a pot with water, add vinegar and salt, and bring to a gentle simmer.
Toast bread: Toast the slices of whole grain bread until they are golden brown.
Poach eggs: Crack an egg into a cup and gently slide it into the simmering water. Repeat for each egg and poach for 3-4 minutes.
Assemble sandwich: Spread butter on each slice of toasted bread, place a poached egg on top, and garnish with arugula if desired.
