Ingredients

  • 4 slices whole grain bread toasted
  • 4 large eggs fresh
  • 1 cup vinegar for poaching eggs
  • 1 tsp salt
  • 2 tbsp butter softened
  • 1 handful arugula optional, for garnish

Instructions

  • Prepare water: Fill a pot with water, add vinegar and salt, and bring to a gentle simmer.
