Ingredients

  • 4 Eggs Preferably fresh
  • 2 tbsp Olive Oil
  • 2 cloves Garlic, minced
  • 1 cup Tomatoes, chopped
  • 1 handful Fresh Basil Leaves
  • 1 pinch Salt
  • 1 pinch Black Pepper

Instructions

  • Prep: Start by chopping the tomatoes and mincing the garlic.
  • Cook Garlic: In a skillet, heat 2 tbsp of olive oil and sauté minced garlic until gold.
  • Add Tomatoes: Add chopped tomatoes to the skillet and stir.
  • Season: Season with salt and pepper, as desired.
  • Add Eggs: Crack the eggs into the skillet, over the tomatoes.
  • Cook Eggs: Let the eggs cook until the whites are set.
  • Serve: Garnish with fresh basil leaves and serve hot.
