Ingredients

  • 2 cups green lentils rinsed and drained
  • 4 cups baby spinach
  • 1 tbsp olive oil
  • 1 tsp cumin powder
  • 1 whole red onion finely chopped
  • 3 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  • Cook Lentils: In the large saucepan, simmer the lentils in three cups of water until tender, about 30-35 minutes. Drain the lentils and set aside.
  • Sauté Ingredients: While the lentils are cooking, heat olive oil in the same saucepan. Sauté onion and garlic until they're aromatic, then stir in cumin powder, salt, and pepper.
  • Add Spinach: Gradually stir in baby spinach to the saucepan until wilted, retaining some crunch and vibrant green colour.
  • Combine: Add the cooked lentils back to the saucepan and stir in fresh lemon juice. Cook for a few more minutes until everything is well combined.
  • Serve: Divide the mixture into four portions and serve warm. Enjoy your Mediterranean Spinach Lentils!
