Ingredients

  • 4 pieces boneless chicken breasts
  • 2 cups pesto sauce
  • 1 cup spanish olives, pitted and sliced divided for cooking and garnish
  • 1 tbsp olive oil
  • 1/2 tsp salt

Instructions

  • Prep: Preheat the oven to 375°F (190°C). Grease the baking dish.
  • Season: In a small bowl, combine olive oil, pesto sauce, and salt. Rub the mixture generously over the chicken breasts.
  • Arrange: Place the chicken breasts in the prepared baking dish. Sprinkle half of the sliced olives on top.
  • Bake: Bake for 20 minutes or until chicken is cooked through and no longer pink in the middle.
  • Serve: Remove from oven, garnish with leftover sliced olives and serve hot with a side salad if preferred.
