Ingredients

  • 4 pcs Ciabatta Rolls
  • 2 tbsp Olive Oil
  • 1 cup Mixed Vegetables (bell peppers, eggplant, zucchini) sliced
  • 4 tbsp Pesto
  • 2 cups Mozzarella Cheese shredded

Instructions

  • Prep: Preheat the oven to 400F (200C). Drizzle olive oil over the sliced mixed vegetables on a baking sheet. Roast in the oven for 15 minutes, or until tender and slightly browned.
  • Assemble: Spread pesto on the insides of the ciabatta rolls. Layer the roasted vegetables and shredded mozzarella on half of each roll. Cover with the other half of the roll.
  • Grill: Preheat the Panini press. Place the assembled sandwiches on the press, then close it. Grill until the cheese is melted and the bread is toasted, about 5 minutes. Serve immediately.
