Ingredients

  • 1 cup all-purpose flour can be replaced with whole wheat flour for a healthier option
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup Greek yogurt
  • 1/4 cup milk
  • 1 egg beaten
  • 1 cup mixed berries
  • 1 tbsp honey

Instructions

  • Mix dry ingredients: flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, combine Greek yogurt, milk, and beaten egg. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  • Pour 1/4 cup of batter onto a heated pan, cook until bubbles appear on the surface. Flip with a spatula and cook until golden brown.
  • In a saucepan, heat mixed berries and honey until it forms a sauce consistency.
  • Serve the pancakes with the berry sauce drizzled over the top.
