Ingredients

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1 cup milk
  • 2 cups mixed berries strawberries, blueberries, raspberries
  • 2 tbsp sugar

Instructions

  • Prep: In a big mixing bowl, combine one cup of all-purpose flour and two teaspoons of baking powder.
  • Mix: Add one teaspoon of vanilla extract and one cup of milk into the mixing bowl and stir until the batter is smooth.
  • Cook Pancakes: Pour 1/4 cup of batter for each pancake onto a hot skillet. Cook until edges are dry and the middle is bubbling, then flip and cook until golden brown.
  • Prepare Sauce: Simultaneously, heat two cups of mixed berries with two tablespoons of sugar in a saucepan. Stir until the berries break down and the sauce thickens.
