Ingredients

  • 4 pieces Cod Fillet Preferably fresh
  • 2 cups Grape Tomatoes
  • 1 cup Mozzarella Cheese Shredded
  • 1 tbsp Olive Oil
  • 1 tbsp Lemon Juice
  • 1 tsp Garlic Minced

Instructions

  • Prep: Preheat the oven to 400°F (200°C). Rip the tomatoes in half and shred the mozzarella.
  • Arrange: Put the cod fillets in a baking dish. Drizzle with olive oil and lemon juice. Scatter the tomatoes and garlic around the cod.
  • Bake: Bake for 15 minutes in the preheated oven until the cod is nearly cooked through.
  • Add Cheese: Sprinkle the shredded mozzarella on top of the cod and return to the oven. Bake for an additional 5-10 minutes until the cheese is melted and golden.
