Ingredients

  • 2 tbsp Olive oil
  • 4 Chicken breasts Boneless and skinless
  • 3 cups Mushrooms Sliced
  • 2 cups Pappardelle pasta
  • 1 cup Cherry tomatoes Halved
  • 1 tbsp Garlic Minced
  • 1 tsp Salt
  • 1 tsp Pepper

Instructions

  • Prepare ingredients: Clean the chicken breasts, slice the mushrooms, halve the cherry tomatoes, and mince the garlic.
  • Cook pasta: In a large pot, cook pappardelle according to package instructions. Drain and set aside.
  • Saute chicken: In a skillet, heat olive oil over medium heat. Add chicken breasts and cook until done. Remove and set aside.
  • Saute mushrooms: In the same skillet, add sliced mushrooms and cook until they release their juices.
  • Combine ingredients: Add the cooked chicken, cooked pappardelle, halved cherry tomatoes, minced garlic, salt, and pepper into the skillet. Stir well to combine.
  • Serve: Serve the Chicken Pappardelle with Mushrooms warm. Enjoy this Mediterranean dish with a side of salad or bread. Bon Appetit!
