- 4 pc eggs
- 1 pc zucchini medium-sized, grated
- 200 g cherry tomatoes halved
- 2 tbsp olive oil
- 1 salt to taste
- 1 black pepper to taste
Prepare: Crack the eggs in a bowl and whisk them. Grate the zucchini and halve the cherry tomatoes.
Cook Zucchini: Heat olive oil in a frying pan and add the grated zucchini. Cook until tender.
Add Tomatoes: To the zucchini in the frying pan, add the halved cherry tomatoes. Cook until tomatoes are softened.
Add Eggs: Add the whisked eggs to the pan, and scramble together with the zucchini and tomatoes. Cook until eggs are set.
Season: Season the scrambled eggs with salt and pepper to taste. Mix well.
