- 500 grams ground beef preferably lean
- 8 pieces low-carb tortillas medium size
- 1 can enchilada sauce low-carb version
- 2 cups cheddar cheese shredded
- 1 cup onion finely chopped
- 2 cloves garlic minced
- 1 tablespoon olive oil
Preheat Oven: Preheat your oven to 375 degrees Fahrenheit.
Cook Beef: In a skillet, heat olive oil over medium heat. Add the onion and garlic and sauté until translucent. Then add the ground beef and cook until browned.
Prepare Tortillas: Warm the low-carb tortillas according to package instructions to make them pliable.
Assemble Enchiladas: Spoon the beef mixture into each tortilla, top with a portion of cheese, roll them up, and place seam side down in the baking dish.
Bake: Pour enchilada sauce over the rolled tortillas and sprinkle with remaining cheese. Bake in the preheated oven for 20 minutes or until the cheese is bubbly and golden.
