Ingredients

  • 2 cups grated zucchini Squeeze out as much water as possible
  • 3 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 cup sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice For glaze
  • 2 tbsp lemon zest For glaze
  • 1 cup powdered sugar For glaze

Instructions

  • Preheat: Preheat your oven to 350 degrees F (175 degrees C)
  • Combine Dry Ingredients: In a large bowl, combine the flour, baking soda and salt
  • Mix Wet Ingredients: In a separate bowl, whisk together the sugar, oil, eggs and vanilla extract
  • Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredient mixture, mixing just until blended
  • Add Zucchini: Stir in the grated zucchini
  • Bake: Pour the batter into a prepared loaf pan and bake for about one hour, or until a toothpick inserted into the center of the bread comes out clean
  • Prepare Glaze: While the bread is cooling, whisk together the lemon juice, lemon zest, and powdered sugar to make the glaze
  • Apply Glaze: Once the bread is completely cooled, drizzle the glaze over the top. Serve and enjoy!
