Ingredients

  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 unit egg beaten
  • 4 tbsp sundried tomatoes chopped
  • 2 tbsp fresh basil minced

Instructions

  • Preheat: Preheat your oven to 400 F (200 C). Prepare your muffin tray by lightly greasing or lining with muffin cups.
  • Combine: In a mixing bowl, combine the flour, cornmeal, baking powder and salt.
  • Add: Add to the dry ingredients mixture, milk, beaten egg, sundried tomatoes and minced basil. Stir until just combined.
  • Bake: Pour the muffin mixture into the prepared muffin tray. Bake for about 20-25 minutes, or until the muffins are golden brown on top and a toothpick inserted in the middle comes out clean.
