Ingredients

  • 1 lb Ground lean beef
  • 1 can Black beans drained and rinsed
  • 1 cup Greek yogurt
  • 1 cup Shredded cheddar cheese
  • 1 bag Tortilla chips high-fiber, 8 oz
  • 1/2 cup Pico de gallo
  • 1/4 cup Sliced jalapeños
  • 1 Avocado diced
  • 2 tbsp Olive oil
  • 1 packet Taco seasoning
  • Salt to taste
  • Black pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add the ground beef, season with salt and pepper, and cook until browned.
  • Stir in the taco seasoning and black beans, and cook for an additional 5 minutes until well combined.
  • Arrange the tortilla chips in a single layer on a baking sheet.
  • Evenly distribute the beef and bean mixture over the chips.
  • Sprinkle shredded cheese over the top and add jalapeños.
  • Bake in the preheated oven until the cheese is melted and bubbly, about 10 minutes.
  • Remove from the oven and top with pico de gallo, diced avocado, and dollops of Greek yogurt.
