Ingredients

  • 3 pounds oxtails trimmed
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 carrots diced
  • 2 stalks celery diced
  • 2 potatoes peeled and diced
  • 1 tablespoon vegetable oil
  • 8 cups beef broth
  • 2 bay leaves
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  • Heat the vegetable oil in a large pot over medium-high heat. Add the oxtails and sear them until browned on all sides, about 5 minutes per side. Remove the oxtails from the pot and set aside.
  • In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
  • Return the oxtails to the pot and add the diced carrots, celery, and potatoes. Pour in the beef broth and add the bay leaves.
  • Bring the soup to a boil, then reduce the heat to low. Cover and simmer for about 2.5 to 3 hours, or until the oxtails are tender and the vegetables are cooked through.
  • Season the soup with salt and pepper to taste.
  • Serve the Hawaiian Oxtail Soup hot, garnished with chopped green onions.
