- 4 pcs Boneless chicken breasts
- 1 cup Quinoa
- 1 bunch Fresh herbs Mix of parsley, cilantro, and dill
- 1 pc Lemon
- 2 tbsp Olive oil
- 1 tsp Salt
- 1 tsp Pepper
Cook Quinoa: Rinse the quinoa under cold water and cook it according to package instructions.
Grill Chicken: Season chicken breasts with salt, pepper, and olive oil. Grill until cooked through on medium heat.
Prepare Herbs: Finely chop the fresh herbs and lemon zest together.
Mix Salad: Combine grilled chicken, cooked quinoa, fresh herbs in a mixing bowl. Squeeze fresh lemon juice over the top, mix well.
