Ingredients

  • 8 slices Whole grain bread
  • 4 slices Fontina Cheese
  • 2 cup Spinach, washed and drained You can also use baby spinach
  • 4 Eggs, medium
  • 2 tbsp Butter

Instructions

  • Toast Bread: First, toast the slices of whole grain bread in the toaster until golden brown.
  • Cook Spinach: In a skillet, melt 1 tablespoon of the butter and sauté the spinach until it wilts.
  • Fry Eggs: Using the same skillet, melt the remaining butter and fry the eggs to your liking.
  • Assemble Sandwich: Place a slice of Fontina cheese on each toasted bread, then add the wilted spinach and fried egg. Top with another slice of bread.
