Ingredients

  • 4 slices bacon chopped
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 potatoes peeled and diced
  • 2 cups corn kernels fresh or frozen
  • 1 red bell pepper diced
  • 4 cups chicken or vegetable broth
  • 1 cup coconut milk
  • 1 tablespoon flour
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  • In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon drippings in the pot.
  • Add the diced onion and minced garlic to the pot with the bacon drippings. Sauté until the onion is soft and translucent, about 5 minutes.
  • Add the diced potatoes, corn kernels, and diced red bell pepper to the pot. Stir to combine.
  • Pour in the chicken or vegetable broth and bring the mixture to a boil. Reduce the heat to low and simmer for about 15-20 minutes, or until the potatoes are tender.
  • In a small bowl, whisk together the coconut milk and flour until smooth. Gradually pour the mixture into the pot, stirring constantly, to thicken the chowder.
  • Season with salt and pepper to taste.
  • Serve the Corn Chowder hot, garnished with the crispy bacon pieces and chopped green onions.
