- 6-8 pieces skinless boneless chicken breasts about 1kg/2lb 4oz in total
- 2 tbsp clear honey
- 2 lemons grated zest and juice of 1
- 2 tbsp olive oil
- 1 curly lettuce such as Batavia or Webb’s
Preheat Oven: Set the oven to 190°C (375°F/gas mark 5). Arrange the chicken in an ovenproof dish.
Prepare Marinade: Combine the honey, lemon zest and juice, and olive oil in a bowl. Season with salt and pepper. Coat the chicken thoroughly.
Roast Chicken: Roast the chicken for 40-45 minutes, turning and basting halfway through, until golden brown. Allow to cool.
Chill Chicken: Once cooled, wrap the chicken in foil and refrigerate. It can also be frozen for later use.
Prepare Salad: Lay the lettuce on a platter, tearing larger leaves. Slice and arrange the chilled chicken on top.
