Ingredients

  • 1 lb boneless skinless chicken thighs, thinly sliced
  • 4 cups chicken broth
  • 4 cups water
  • 4 ounces long rice noodles bean thread noodles
  • 1 onion thinly sliced
  • 3 cloves garlic minced
  • 2 carrots julienned
  • 2 stalks celery thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  • In a large pot, bring the chicken broth and water to a boil over medium-high heat.
  • Add the chicken slices and long rice noodles to the pot. Cook for about 5 minutes, or until the chicken is cooked through and the noodles are tender.
  • In a separate pan, heat a tablespoon of oil over medium heat. Add the sliced onion and minced garlic, sautéing until fragrant and translucent.
  • Add the julienned carrots and thinly sliced celery to the pan with the onion and garlic. Cook for an additional 3-4 minutes until the vegetables are slightly softened.
  • Transfer the cooked vegetables to the pot with the chicken and noodles.
  • Stir in the soy sauce and oyster sauce. Season with salt and pepper to taste.
  • Simmer the Chicken Long Rice for an additional 5 minutes to allow the flavors to meld.
  • Serve the soup hot, garnished with chopped green onions.
