Ingredients

  • 1 cup ricotta cheese
  • 3 tbsp sugar
  • 2 eggs
  • 3/4 cup flour
  • 1 tsp baking powder
  • 1 lemon zest grated

Instructions

  • Mix Ingredients: In one bowl, combine ricotta cheese, sugar, and eggs until smooth. In another, mix flour and baking powder.
  • Combine Mixture: Gradually add the dry ingredients into the wet, stirring until just combined.
  • Add Zest: Fold in the grated lemon zest.
  • Cook Pancakes: Heat a frying pan over medium heat. Scoop batter onto the pan and cook until golden. Flip with spatula and cook the other side.
